The court of flavors, with its chef Branca Mauro and his team, aims to enhance and make valuable products of the territory and of the Salento tradition.

Mauro, a hotel graduate in S. Cesarea Terme, has always believed in the raw materials of the territory, so much so that all his experiences in luxury and extra-luxury restaurants have always made him believe that he is returning to his native land and can give value to what Salento offers. In fact, La Corte Dei Sapori offers contemporary dishes without ever straying from tradition, strongly believing that throughout the year, our territory can offer raw materials of all kinds and of every consistency such as to be able to vary our menu. Few dishes but concrete and with a history behind them, dishes that will be constantly updated thanks to everything that the land and the sea offer us.
